Teeny-Weenie Beet Pickles


  • 1 quart beets, small
  • 2 cups sugar
  • 4 cups vinegar
  • whole cloves


  • Add beets to a pot and cover with 1 inch of water. Boil until tender.
  • In another pot, boil vinegar and sugar together for 5 minutes, then add drained beets to this pot.
  • In sterilized jars, place 3 cloves in each, and add beets and juice to within 1/4″ of top. Seal.


  • If small beets are not available, larger ones can be cut up.
