Teeny-Weenie Beet Pickles
- 1 quart beets, small
- 2 cups sugar
- 4 cups vinegar
- whole cloves
- Add beets to a pot and cover with 1 inch of water. Boil until tender.
- In another pot, boil vinegar and sugar together for 5 minutes, then add drained beets to this pot.
- In sterilized jars, place 3 cloves in each, and add beets and juice to within 1/4″ of top. Seal.
- If small beets are not available, larger ones can be cut up.
