Chicken with 40 Cloves of Garlic

  • 2/3 cup vegetable oil
  • 8 chicken drumsticks, bone and skin on
  • 8 chicken thighs, bone and skin on
  • 4 ribs celery, chopped
  • 2 medium onions, chopped
  • 1/2 cup sherry
  • 40 cloves garlic, peeled
  • 6 sprgs parsley
  • 1 tbsp fresh tarragon, chopped
  • 2 1/2 tsp salt
  • 1/4 tsp ground pepper


  • In a large frying pat, heat the oil over medium-high
  • Add the chicken pieces and cook until browned
  • In a 6-quart casserole dish, spread an even layer of the onion, celery, parley, and tarragon
  • Lay the browned chicken over the vegetables
  • Pour the sherry over the chicken and sprinkle with salt and pepper
  • Tuck the garlic cloves around the chicken
  • Cover the casserole dish with aluminium foil and the lid
  • Bake in a 375ºF oven for 90 minutes without removing the cover


  • Serve the chicken, pan juices, and whole garlic cloves with thin slices of French bread, so that the garlic can be smeared across the bread
  • Alternately, add the pan juices and garlic to whipped mashed potato and serve as a side to the chicken
