Cream together the brown sugar and shortening in a large bowl
Add in the eggs, beating well after each addition.
Stir in the maple syrup and vanilla.
Mix in the flour until combined.
Roll the dough out on a floured surface to 1/4" thickness. Using cookie cutters, cut into rounds. Every second cookie should have a hole cut out of the centre with a thimble.
Place cookies on a greased baking sheet and bake for 7–10 minutes. They should be golden, but not browned.
When the cookies have cooled, spread apple jelly on the whole cooke base, and top it with a cookie with cut out centre.

While delicious still warm, these cookies are best the next day.
