Chicken with 40 Cloves of Garlic

vegetable oil

chicken drumsticks

sherry

fresh tarragon

Instructions
In a large frying pat, heat the oil over medium-high
Add the chicken pieces and cook until browned
In a 6-quart casserole dish, spread an even layer of the onion, celery, parley, and tarragon
Lay the browned chicken over the vegetables
Pour the sherry over the chicken and sprinkle with salt and pepper
Tuck the garlic cloves around the chicken
Cover the casserole dish with aluminium foil and the lid
Bake in a 375ºF oven for 90 minutes without removing the cover
Notes
Serve the chicken, pan juices, and whole garlic cloves with thin slices of French bread, so that the garlic can be smeared across the bread
Alternately, add the pan juices and garlic to whipped mashed potato and serve as a side to the chicken
