• 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp white sugar
  • 1 1/4 cups milk
  • 1 egg, beaten
  • 3 tbsp butter, melted
  • 1 tsp vanilla extract


  • In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the centre, and pour in the milk, egg, melted butter and vanilla. Mix together until fairly smooth (some lumps are OK).
  • Heat a lightly oiled or buttered griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, aiming for about 1/4 cup of batter for each pancake. Brown on both sides, and serve hot.


  • Using this recipe as a base, add a chopped fruit like apples, bananas, or blueberries while mixing together.
