Nanny’s Jelly Roll

Ingredients
- 3 eggs, room temperature
- 1 cup white sugar
- 1 cup flour
- 1/2 cup boiling water
- 1 tsp vanilla extract
- 1 tsp baking powder
- icing sugar
Instructions
- Grease and flour a jelly roll pan* or a cookie sheet (it must have high enough sides to hold the batter)
- Line the pan with greased wax paper or parchment paper
- Beat the eggs until light and fluffy, gradually adding the sugar. The mixture should be light and creamy
- Stir in the vanilla extract
- Mix together flour and baking powder. Slowly incorporate the dry mixture into the wet.
- Beating the mixture well, stir in the boiling water
- Pour carefully into the prepared pan
- Bake in a 350ºF oven for 15 minutes, or until the cake is brown and springs back when touched
- Dampen a clean tea towel and sprinkle the length with icing sugar
- Loosen the cake around the edges and let it fall gradually out of the pan and onto the tea towel
- Once out of the pan, roll up immediately using the tea towel to keep the cake from sticking to itself
- Let the cake cool fully before unrolling
- Once cool, unroll the cake and spread your favourite jelly or jam and re-roll
- To serve, slice into generous portions

- A jelly roll pan is commonly 9 x 15 inches or 25 x 40 cm
