Double Chocolate Zucchini Cake

  • 3 cups All-Purpose flour
  • 2 1/3 cup brown sugar, packed
  • 12 tbsp Dutch cocoa powder
  • 4 cups zuchinni, grated
  • 2 cups chocolate chips
  • 1 1/2 cups vegetable oil
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1 1/4 tsp salt
  • 1 tsp baking soda


  • Combine flour, baking powder, cinnamon, salt, and baking soda. Set aside
  • Beat together oil and sugar. Add the eggs one-at-a-time, making sure to beat well after each addition
  • Add the cocoa powder to the liquid mixture and combine well
  • Add the dry ingredients to the dry, beat until smooth
  • Fold in the grated zucchini and chocolate chips
  • Pour into a greased and floured bundt pan
  • Bake at 350ºF for 60-80 minutes. Check the oven frequently after one hour*
