Double Chocolate Zucchini Cake

Ingredients
- 3 cups All-Purpose flour
- 2 1/3 cup brown sugar, packed
- 12 tbsp Dutch cocoa powder
- 4 cups zuchinni, grated
- 2 cups chocolate chips
- 1 1/2 cups vegetable oil
- 1 1/2 tsp cinnamon
- 1 1/2 tsp baking powder
- 1 1/4 tsp salt
- 1 tsp baking soda
Instructions
- Combine flour, baking powder, cinnamon, salt, and baking soda. Set aside
- Beat together oil and sugar. Add the eggs one-at-a-time, making sure to beat well after each addition
- Add the cocoa powder to the liquid mixture and combine well
- Add the dry ingredients to the dry, beat until smooth
- Fold in the grated zucchini and chocolate chips
- Pour into a greased and floured bundt pan
- Bake at 350ºF for 60-80 minutes. Check the oven frequently after one hour*
Notes
- The amount of liquid from the zucchini can vary from batch to batch, making a drier mix. Check the cake after one hour in the oven to see how it is progressing.
