Chicken with 40 Cloves of Garlic

Ingredients
- 2/3 cup vegetable oil
- 8 chicken drumsticks, bone and skin on
- 8 chicken thighs, bone and skin on
- 4 ribs celery, chopped
- 2 medium onions, chopped
- 1/2 cup sherry
- 40 cloves garlic, peeled
- 6 sprgs parsley
- 1 tbsp fresh tarragon, chopped
- 2 1/2 tsp salt
- 1/4 tsp ground pepper
Instructions
- In a large frying pat, heat the oil over medium-high
- Add the chicken pieces and cook until browned
- In a 6-quart casserole dish, spread an even layer of the onion, celery, parley, and tarragon
- Lay the browned chicken over the vegetables
- Pour the sherry over the chicken and sprinkle with salt and pepper
- Tuck the garlic cloves around the chicken
- Cover the casserole dish with aluminium foil and the lid
- Bake in a 375ºF oven for 90 minutes without removing the cover
Notes
- Serve the chicken, pan juices, and whole garlic cloves with thin slices of French bread, so that the garlic can be smeared across the bread
- Alternately, add the pan juices and garlic to whipped mashed potato and serve as a side to the chicken
