Aunt Jessie’s Jam-Jams
Ingredients
- 2 eggs
- 1 cup brown sugar
- 1 cup shortening
- 1 tsp baking soda
- 1 tsp vanilla extract
- 6 tsp maple syrup
- 2 cups flour
- apple jelly
Instructions
- Preheat oven to 350ºF.
- Cream together the brown sugar and shortening in a large bowl
- Add in the eggs, beating well after each addition.
- Stir in the maple syrup and vanilla.
- Mix in the flour until combined.
- Roll the dough out on a floured surface to 1/4″ thickness. Using cookie cutters, cut into rounds. Every second cookie should have a hole cut out of the centre with a thimble.
- Place cookies on a greased baking sheet and bake for 7–10 minutes. They should be golden, but not browned.
- When the cookies have cooled, spread apple jelly on the whole cooke base, and top it with a cookie with cut out centre.
Notes
- While delicious still warm, these cookies are best the next day.
