In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the centre, and pour in the milk, egg, melted butter and vanilla. Mix together until fairly smooth (some lumps are OK).
Heat a lightly oiled or buttered griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, aiming for about 1/4 cup of batter for each pancake. Brown on both sides, and serve hot.
Notes
Using this recipe as a base, add a chopped fruit like apples, bananas, or blueberries while mixing together.
