Nanny's Jelly Roll

Ingredients
3
eggs
room temperature
1
cup
white sugar
1
cup
flour
1/2
cup
boiling water
1
tsp
vanilla extract
1
tsp
baking powder
icing sugar
Instructions
Grease and flour a jelly roll pan* or a cookie sheet (it must have high enough sides to hold the batter)
Line the pan with greased wax paper or parchment paper
Beat the eggs until light and fluffy, gradually adding the sugar. The mixture should be light and creamy
Stir in the vanilla extract
Mix together flour and baking powder. Slowly incorporate the dry mixture into the wet.
Beating the mixture well, stir in the boiling water
Pour carefully into the prepared pan
Bake in a 350ºF oven for 15 minutes, or until the cake is brown and springs back when touched
Dampen a clean tea towel and sprinkle the length with icing sugar
Loosen the cake around the edges and let it fall gradually out of the pan and onto the tea towel
Once out of the pan, roll up immediately using the tea towel to keep the cake from sticking to itself
Let the cake cool fully before unrolling
Once cool, unroll the cake and spread your favourite jelly or jam and re-roll
To serve, slice into generous portions
