Nanny’s Jelly Roll

Ingredients

  • 3 eggs, room temperature
  • 1 cup white sugar
  • 1 cup flour
  • 1/2 cup boiling water
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • icing sugar

Instructions

  • Grease and flour a jelly roll pan* or a cookie sheet (it must have high enough sides to hold the batter)
  • Line the pan with greased wax paper or parchment paper
  • Beat the eggs until light and fluffy, gradually adding the sugar. The mixture should be light and creamy
  • Stir in the vanilla extract
  • Mix together flour and baking powder. Slowly incorporate the dry mixture into the wet.
  • Beating the mixture well, stir in the boiling water
  • Pour carefully into the prepared pan
  • Bake in a 350ºF oven for 15 minutes, or until the cake is brown and springs back when touched
  • Dampen a clean tea towel and sprinkle the length with icing sugar
  • Loosen the cake around the edges and let it fall gradually out of the pan and onto the tea towel
  • Once out of the pan, roll up immediately using the tea towel to keep the cake from sticking to itself
  • Let the cake cool fully before unrolling
  • Once cool, unroll the cake and spread your favourite jelly or jam and re-roll
  • To serve, slice into generous portions

  • A jelly roll pan is commonly 9 x 15 inches or 25 x 40 cm
