Aunt Jessie’s Jam-Jams

Ingredients

  • 2 eggs
  • 1 cup brown sugar
  • 1 cup shortening
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 6 tsp maple syrup
  • 2 cups flour
  • apple jelly

Instructions

  • Preheat oven to 350ºF.
  • Cream together the brown sugar and shortening in a large bowl
  • Add in the eggs, beating well after each addition.
  • Stir in the maple syrup and vanilla.
  • Mix in the flour until combined.
  • Roll the dough out on a floured surface to 1/4″ thickness. Using cookie cutters, cut into rounds. Every second cookie should have a hole cut out of the centre with a thimble.
  • Place cookies on a greased baking sheet and bake for 7–10 minutes. They should be golden, but not browned.
  • When the cookies have cooled, spread apple jelly on the whole cooke base, and top it with a cookie with cut out centre.

Notes

  • While delicious still warm, these cookies are best the next day.
